Stuffed Zucchinis – Corsican recipe

INGREDIENTS

For 6 à 8 persons / Preparation time : 10min / Cooking time : 50min

-6 zucchini,
-one third of a fresh “brocciu” (goat cheese),
-1 egg, 2 cloves of garlic,
-1 parsley branch,
-3 or 4 tablespoons of olive oil,
-breadcrumbs.

PREPARATION
Blanch the zucchini in a saucepan of salted boiling water (just for a few minutes, they need to stay firm).
Cut them lengthwise in half and with a small spoon scoop out enough pulp to make a hollow for the filling.
In a bowl mix the pulp with the finely chopped garlic and parsley, the goat cheese, a beaten egg, salt and pepper.

Fill the zucchini with the mixture and sprinkle them with the breadcrumbs.
Put the zucchini in a slightly oiled baking tin, sprinkle them with the remaining olive oil and bake in the oven for about 45 minutes.
Another way to prepare stuffed zucchini is by mixing the pulp with some parsley, garlic, minced ham, crumbled bread soaked in milk, 1 egg, salt and pepper.
Sprinkle the stuffed zucchini with some breadcrumbs and Gruyere cheese.
Put in a baking tin and place small pieces of fresh tomato between the zucchini.
